Gas fryer: won't ignite or won't stay lit
Pilot, ignitor, or thermopile
If the burner won't light or won't stay lit, the pilot, ignitor, or thermopile is the usual suspect. On standing-pilot fryers, a weak thermopile won't hold the gas valve open.
Gas supply
Confirm the gas is on and other gas equipment is working. A partially closed valve or a supply issue can starve the burner.
Tripped high-limit safety
Fryers have a high-limit (safety) switch that cuts the burner if oil overheats. Once tripped, the fryer won't heat until the fault is resolved and it's reset — and a repeatedly tripping high-limit points to a deeper problem.
Electric fryer: won't heat
Burned-out heating element
On electric fryers, a failed element is the most common no-heat cause.
Reset and power
Check that the unit has power and that any reset button hasn't tripped. Persistent tripping means an electrical fault that needs a technician.
Both types: overshooting or drifting temperature
If the fryer heats but runs too hot, too cool, or swings around setpoint, the thermostat or control is usually failing. This wastes oil and produces inconsistent food.
